Jalapeno Soup Surprise!

Well, I did it! I created the culinary equivalent of my mom's infamous pizza casserole! Because of an excess of jalapeno peppers, I have been looking for recipes to use them in. Somehow, at some point I thought the soup recipe I found that called for jalapenos, tomatoes, avocado, and heavy cream would be good...it wasn't. Even Andrew didn't like it, and that tells you something. He normally eats and enjoys everything... he ate the soup, but the theme of the meal was "thank you for cooking for us", not "this is so good". :) I felt sorry for the kids as they were eating (with much encouragement from daddy). At one point, Andrew just started laughing. When I asked what he was laughing about, he said that he couldn't spell the name of the child he was laughing at. Bekah said, "Is it R-E-B-E-K-A-H?". :) Andrew said she was sitting there with a piece of avocado on her spoon, just staring at it mournfully... probably thinking, "Do I really have to eat this?" So, mom, when you read this, take heart. I am getting paid back for giving you a hard time about the pizza casserole... :)
