Eggless and Milkless Muffins

Sooo... it's Friday, the day I normally get groceries. Sometimes, by Friday our food choices can be pretty limited. Today is a case in point, I didn't get milk and eggs at the farm like normal because it was snowing... and I refuse to drive on bad roads. I knew if I made oatmeal again this morning, my kids would fire me. So I got creative, looked up this recipe, and then made the following:

In a large bowl, mix:
4 c. white flour
1 t. baking soda
1 t. baking powder
3 T. brown sugar
3 T. white sugar
3/4 t. salt
3/4 c. chopped almonds
1 1/4 c. mini choc. chips

In a separate smaller bowl, mix:
32 oz. sour cream
1/4 c. veggie oil
2-3 T. honey
1 c. water
1 T. vanilla

Mix wet ingredients into dry until all dry ingredients are incorporated. Put into sprayed or lined muffin pans. Bake at 400 degrees for 12-15 minutes or until muffins are just starting to turn brown and bounce back to the touch.

*Disclaimer: these are not the most wonderful muffins I've ever made. They were good, however, and I will make them again if I need to. :) You could try lots of other add-ins instead of the almonds and choc. chips.
