Strawberry Muffins!


I had to share this yummy recipe that I've made several times over the last couple of weeks... I got the original recipe off allrecipes.com (which is my personal favorite website for recipes), and tweaked it just a little... Enjoy a little taste of spring, and dream of warmer days! :) I have been!

Strawberry Muffins
Makes 12

1/4 c. oil
1/2 c. milk
1 egg
1 t. vanilla
1/2 t. salt
2 t. baking powder
1/2 c. sugar
1 3/4 c. flour
1 1/4- 1 1/2 c. chopped strawberries

1. Preheat oven to 375 degrees. Grease muffin tin.

2. Combine oil, milk, egg, and vanilla in a small bowl. Beat lightly.

3. Mix dry ingredients in a large bowl. Add chopped strawberries and stir to coat with flour. Pour milk mixture into dry mixture and stir just until moist.

4. Fill muffin cups 2/3 full. Sprinkle tops liberally with sugar. (You could also use sugar with a touch of cinnamon). Bake at 375 degrees for 20-25 minutes, or until tops bounce back from the touch. Cool several minutes before removing from pan.

(Just a note... I've been using slightly defrosted frozen strawberries and slicing them, they have been delish! You could also use fresh strawberries, if you live somewhere a lot warmer than PA! :))
